FINAL PROJECT: Abstract and Reader's Reponse > Homebrewing Hard Apple Cider for Beginners

ABSTRACT: This paper acts as a beginners guide on how to homebrew hard apple cider starting from raw apples. First, we investigate the scientific research on why so many homebrew hobbyists derive pleasure from fermenting their own alcohol. Then I provide a comprehensive set of directions which walk the reader through every step of the brewing process. Within these directions, there are scientific explanations as to what is happening at the molecular level with the yeast as well as the flavor and color compounds. This will help the reader achieve a deeper understanding of why each step is conducted, and how they might be able to modify each step to better suit their end goals. At the end of this guide, I have included an entire section of microbiological information which overviews common microorganisms that can infect a home brew. This section will serve to help the reader identify these organisms and become confident in their ability to execute a safe and successful brew of their own. Finally, there is a section on advanced home brewing tricks which you can experiment with once you are confident in your basic skills. Home brewing is both an art and a science, and the only way to truly experience it is to get started!

READER’S PROFILE: The skeptical reader may be one who is scared that home fermentation is not safe, and that there may be all sorts of toxic organisms that can contaminate their brew.

READER”S RESPONSE: Homebrewing sounds so cool! But what if a toxic fungus grows in my cider that makes all of my friends sick?? This guide does say that it is very uncommon to not have a visual cue when something is growing in the brew. And with modern sanitation methods, homebrewing is easier than ever. The microbiological guide at the end also seems very comprehensive, and it even includes pictures of what to look for to make sure my brew is safe! Maybe I will try a small batch at first, and if everything looks good, I’ll sample a bit myself to make sure it’s safe.

D, I may very well try this in January. So, think of me as a user. Make sure I have equipment lists and suggestions, so I purchase good equipment at a reasonable price.
